For nisin-containing samples, nisin-free SUVs dispersions were subjected to four heatingcoolingcycle through micro-DSC in order to ensure the achievement of stable lipid phases. Then, theadequate amounts of scanned SUVs dispersions and nisin stock solution were mixed and diluted inbuffer just before launching the measurement achieving 3mM and /-N concentrations forphospholipids and nisin, respectively (1:100 nisin:phospholipid ratio). Four heating-cooling cycleswere applied to each sample in order to achieve and ensure the reproducibility of the lipid phases.26All transitions were reversible and the last cycle heating curves were considered to evaluate theparameters of the thermotropic transitions observed (Figure S3 and Figure S4 in SupportingInformation). Errors were evaluated on the basis of at least three replicas.
