The Indian diet is composed of pure and simple foods—unrefined, unprocessed and natural. While in recent years foreign influences have led to a greater use of canned foods, bleached white flour and refined white sugar, traditional Indian cuisine uses fresh foods, unbleached flour and unrefined sugars. The recipes in this book reflect the more traditional Indian diet. Canned or prepared foods may be used when they do not severely detract from the taste or healthfulness of the dish. Unrefined organic sugar or other natural sweeteners such as honey or agave are used.
