3 CONTROL REQUIREMENTS AND CONTROL SYSTEM DESIGN OF BEER FERMENTATION PROCESS3.1 Beer Fermentation ProcessModern beer production process can be mainly divided into four main processes, namely malting, mashing, fermentation and filling, etc. The fermentation phase in beer production process, as an example, belongs to the field of biological chemical engineering. The traditional fermentation process contains a number of detailed manufacturing phases, such as: wort oxygenation, yeast, fermentation, filtration, modification, yeast propagation, and so on. Furthermore, the fermentation phase is the longest link in the entire beer production process, which can last for about twenty days. In this phase, saccharificationwort sugars are broken down into H2O, C2H5OH, CO2, etc [4]. At the same time, a large amount of heat is released, while a wide variety of fermentation byproducts will be produced in the fermentation process.
