On the basis of the single factor experiment, an orthogonal experiment with 3 factors and 2 levels was designed to optimize the degumming process. The experimental results show that the optimum conditions for enzymatic degumming of rapeseed oil are: pH value 5, time 3h, stirring speed 300r/min. Finally, according to the experimental conclusion, the factory production process of rapeseed oil was designed, and the material balance, cost and profit estimation were made for the factory production of 1,000 tons of rapeseed oil per year.
