从史料中我们可以得知茶的叫法有很多。从西汉的司马相如《凡将篇》中的“薛诧”;到西汉末年的扬雄《方言》中的“落”,再到《神农本草经》中的“茶草”或“选”;东汉的《桐君录》的“几芦木”;南朝宋山谦之《吴兴记)的“薛";东晋装渊的《广州记》的“皋芦”皆是茶的名称;此外,还有“诧”、“妊”、“茗”、“栋”等都被认为是茶的不同叫法。唐陆羽在《茶经》中,也提到“其名,一曰茶,二曰横,三曰蓬,四曰茗,五曰萍”。从中可以看出在陆羽之前,对茶的名字的叫法就多达10多种,但是茶的名称中用得最多、最普遍的却是荼。随着饮茶活动相关事宜不断的发展,指茶的“荼”字使用越来越多,但为了有区别的必要,便从 “荼”字中,衍生出“茶”字.陆羽在写(茶经》(公元758年左右)时,将“荼"字减少一划,改写为“茶”。从此,在古今茶学书中,茶字的的形、音、义也就固定下来了,并一直沿用至今。
