Whether or not probiotics work as probiotics depends in large part on whether the strains can successfully navigate the acidic environment of the stomach and the high bile salt environment of Duodenum, and reach the small intestine as viable bacteria, in order to play the adjustment function of micro-ecology. The Ph of the intestinal tract is about 8.0, and the residence time of food in the small intestine is 1-4 hours, the strains with good tolerance to bile salt can be selected by testing their survival ability in the environment containing bile salt and their growth in different concentrations of bile salt. Generally, the concentration of bile salt is 0.15%-0.3% in the bile salt tolerance test of probiotics. From some experiments, it is concluded that the strains with strong acid and bile salt tolerance have high cholesterol-lowering ability, and these strains have wide application prospects.
