Camellia oleifera seed oil has a high content of unsaturated fatty acids. After refining, the loss of active substances is greater. If stored improperly, it is easier to oxidize. In order to slow down the oxidation process of camellia seed oil, improve its oxidation stability and prolong its shelf life, many scholars have carried out a lot of research, including research and development of processing technology, selection of storage container materials, the most suitable storage conditions, research and development and utilization of various antioxidants. In this paper, the research progress of improving the antioxidant properties of camellia seed oil was reviewed, and the future research directions of the oxidation stability of camellia seed oil were prospected, which could provide a reference for the study of the oxidation stability of camellia seed oil.<br>
