Tyrosinase (EC1.14.18.1) is a multifunctional metal oxidase with two Cu2+ active centers, also known as polyphenol oxidase, which is widely present in animals, plants, microorganisms and humans. Tyrosinase plays an important role as a key rate-limiting enzyme in the synthesis of melanin in organisms. Melanin is the main cause of melanosis in aquatic products, black spots in mammals and enzymatic browning of fruits and vegetables. Therefore, it is of great significance to establish a scientific and effective method for the detection of tyrosinase content in aquatic products, fruits and vegetables, and provide a new reference standard for realizing the quality evaluation of aquatic products, fruits and vegetables. At present, people have established a variety of method systems for the detection of tyrosinase activity, which are mainly divided into three categories: colorimetry, electrochemistry and fluorescence. These methods have certain advantages in terms of operability, sensitivity, and accuracy. Among them, electrochemical method is a more ideal method, which has outstanding advantages in terms of automation degree, detection speed, and real-time monitoring of complex systems.
