Floors should beslightly sloped to allow for proper drainage and avoid water accumulation. Fixtures,ducts, and pipes should be suspended away from working areas and aisles, and workingareas kept unobstructed. Ventilation and lights should be adequate; and lights enclosed insafety fixtures to avoid contamination due to breakage. Separating the food processingarea from the rest of the facility is a necessity to reduce the potential for contamination.To minimize pests, door and windowsills should be tight. Windows should be protectedwith screens, as well as other openings that would allow unwanted pests. Drains needtraps and proper covers or grills.
