Recently, it has also been reported that oleic acid not only forms vesicles at intermediate pH, but if dispersed in aqueous solution at pH 8.0–8.1 under appropriate experimental conditions, oleic acid may also assemble into highly dynamic, micrometer-sized left- and right-handed helical aggregates, as visualized by differential interference contrast light microscopy [54]. This is an interesting experimental observation that certainly needs further investigation in order to understand the underlying molecular interactions and principles that are responsible for the formation of the helical assemblies.
