It is day 10 on skin for our house block shiraz, tasted it before, it is really fill out lots of tannin, lots of flavor, we gonna leave on the skin a bit of longer, what we are going to do is, we just give one gentle plunging in the morning, just keep this skins wet, we really try to as gentle as possible, we donot break down the skins or seeds to get any those bitter or harsh tannin in the wine.
