Therefore, the research of simple and rapid detection of phenolic antioxidants in food has attracted a certain degree of attention. There are also a large number of literature reports on the detection and analysis methods of preservatives and sweeteners widely used in food. On the other hand, the research of new detection technology, such as capillary electrophoresis, is a relatively new analytical technology compared with high performance liquid chromatography and gas chromatography. Because of its wide range of analysis objects and high resolution, it has gradually developed into one of the most powerful analysis methods in recent years. There are many applications of capillary electrophoresis in the detection of food additives, including pigments, preservatives, antioxidants and sweeteners. In order to meet the increasingly stringent requirements of food additives management regulations, capillary electrophoresis technology with higher detection sensitivity and more novel will be developed rapidly.
