Chitosan is a very valuable polymer material. Chitosan membrane material is widely used in food preservation because of its simple principle, low cost, environmental protection and other advantages, as well as its good film-forming, mechanical, adsorption, wetting, safe and edible properties, which is of great significance for food preservation. There are many defects in the old preservation methods, so it is necessary to study new preservation methods to improve the effect of food preservation. Firstly, the properties of chitosan, its comprehensive properties, fresh-keeping mechanism and application research status are introduced. Then, the fresh-keeping applications of chitosan in fruits and vegetables, fresh meat, meat products and aquatic products are summarized, so as to provide theoretical basis for the further application of chitosan film materials as fresh-keeping film.<BR>
