1.5.2 Culinary UsesTomatoes are widely used in our daily routine, like in preparation of salads, vegetables and curry. There is not any dish in our daily uses which is completed without using tomatoes. Tomato is available in range of different colors such as green yellow red and purple. They are often eaten raw as garnish for salads and appetizers, slices for sandwiches and pasta, meat and vegetable dishes. These are also used in soups, stews and sauces (Goplan et al., 1984)1.5.3 CompositionTomatoes are widely consumed as fresh and processed forms 100 grams of tomatoes contain carbohydrates 3.6 gram of protein, 0.9 gram fiber 0.8 gram of Fat, 0.2 gram of calcium, 48 milligram ascorbic acid, 27 milligram Phosphorus, 20 milligram iron, 0.4 milligram energy (20 kcal) and also contain pigments like lycopene and beta carotene pigments (Gopalan et al., 1984).
