Under a pressure of about 59 atmospheres, it may becondensed into a liquid, a portion of which forms a white solid ("dry ice") upon rapidvaporization. Solid carbon dioxide sublimes, or evaporates without melting, uponexposure to air. One volume of gas dissolves in about 1 volume of water forming anacidic solution when tested using litmus.Sampling of CO2, liquid or gaseous, should be based on the ISBT Method as referenced within the “Bulk Carbon Dioxide, Quality Guidelines and Analytical Methods Reference”.This publication is available within the International Society of Beverage Technologists(ISBT) website.
