The negative correlation between high protein contentof mushrooms (PO, PC) and low C/N ratio of substrate(Fig. 1E) implies that nitrogen is essential for synthesis ofprotein in mushroom fruiting bodies. This result was inline with Ragunathan and Swaminathan [46], the proteincontents of mushroom depended on biological, chemicaldifferences and the C/N ratio of substrates.
