In a thick-bottomed saucepan, heat the olive oil or ghee, then turn down the heat to medium. Immerse the disks in the hot oil 3–4 at a time and deep-fry, turning frequently, until golden brown about 2 minutes. Remove with a slotted spoon, letting the excess oil drip back into the pan. Drain further on paper towels. Stored in an airtight container, they will keep unrefrigerated for 8-10 weeks
