Operations which subdivide large pieces of food into smaller units or particles areclassified as disintegrating. It may involve cutting, grinding, pulping, homogenizing, andso on. Although the dicing of vegetables is done on automatic machines, the cutting ofmeat still largely represents a time-consuming, hand-labor operation. This is becauseskill is required to separate specific cuts of meat, and the value of the cuts can be sharplyreduced by a sloppy job. However automatic knives with a“rain”are being researchedand developed. In another application, cutting of bakery products can be done cleanlyand precisely with fine jets of high-pressure, high-velocity water. Laser beams also canreplace knives in some cutting applications.
